My farmer and our daughter's farmer. :-)
Fall Harvest on the farm requires lots of planning and preparation in the kitchen. You never know if you'll have 1, 2 or 5 or more hungry farmers to feed or if you'll be taking the meals to the field or if you have to run the grain cart and still provide the food for everyone. I've been doing a lot of prep and putting things in the freezer for this years meals.
Here’s one of my favorites to put in the freezer and have on
hand for harvest and the winter months. A recipe you
can put in the freezer and bake frozen when you have farmers to feed, unexpected
company or want a fresh coffee cake.
Apple Coffee Cake
½ cup Margarine
1 Cup Sugar
2 eggs
1 teaspoon vanilla
2 cups flour
1teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
mix all of the above together and
add 1 cup sour cream
2 cups chopped apples
Split dough in to 2 – 8x8 pans or 1 9x13 pan
Topping
Mix together 2 Tablespoons margarine
¾ cup brown sugar
1 teaspoon cinnamon
Sprinkle on top of the dough.
Bake at 350 degrees
Or
Cover and put in freezer. When ready to bake remove cover
and bake frozen at 350 degrees for 45
minutes.
